sunday cooking: vegan chicken quesadillas & broiled asparagus
we decided to do some cooking today and ended up with some tasty chicken quesadillas
this is our really easy and filling version of the tex-mex classic.
take a tortilla wrap, cover it in grated cheese (we used Red Cheddar Cheezly), add a layer of fried mock chicken, sprinkle with some chopped spring onions, add some more cheese, cover with a second wrap. now fry in a non-stick pan (no oil necessary).

served with some asparagus spritzed with olive oil and red basil and a quick mild salsa (cherry tomatoes, spring onions, salt pepper, basil, pinch of garlic salt)
