Sunday Baking: Hazelnut Cake Experience
i found this recipe, searching for quick and easy cakes, via chefkoch.de. the recipe is originally for a blackberry cake but i sprinkled the batter with almonds instead of pressing blackberries into the top. i also added an additional cup (half soy milk, half water) of liquid because after following the instructions faithfully i ended up with a dough rather than a batter.
so here goes:
what:
2 cups flour
1 cup sugar
1 cup of oil
1 cup of “milk”/water (or half half)
1 cup ground hazelnuts
1 pack vanilla sugar (ca. 5 teaspoons)
1 pack baking powder
1 teaspoon cinnamon (optional)
handful of almond flakes
how:
preheat oven to 180 C/ 350F
mix together all ingredients and pour smooth batter into well greased form, sprinkle with almond flakes
bake for 45-50 minutes
let cool and have a slice with a big cup of coffee
