Austrian home-cooking: Linsengulasch mit Wasserspatzen
i grew up watching my grandmother cook, she is an efficient and good cook and a wonderful gardener, too. last night i channeled her chef-spirit and re-created my favourite meal of hers: Linsengulasch mit Wasserspatzen!
Linsengulasch:
heat vegetable oil and fry one chopped up onion until translucent, stir in a tablespoon of mild paprika and add the lentils (i used a big can of pre-cooked lentils for instant gratification), cover the lentils in vegetable broth, add a bay leaf if you like and let boil for a while. add a little flour to thicken the sauce, add tofu cubes if you’d like. salt, pepper to taste, stir stir stir. done.
i also added a few twigs of lemon thyme which turned out to be a nice touch.

Wasserspatzen:
mix flour and water and 2 tablespoons of soy flour, add salt, stir until you get a sticky dough. let rest for 30 minutes.
bring water to boil and drop in spoonfulls of dough. the dumpling-like Spatzen are done when they swim at the surface.
