home cooking: oh, glorious rainy day!
i have never made my own corn bread, i don’t think i ever even had corn bread before! this morning i decided i had to change that fact.
i found a really easy recipe in one of my neglected cookbooks, called Simply Vegan by Debra Wasserman.
Corn Bread (serves 6)
1 cup cornmeal
1 cup whole wheat flour
1 tablespoon baking powder
1/4 cup oil
1 cup soy milk
1/3 cup molasses or maple syrup (i used the latter)
how:
preheat oven to 375 F/ 190 C degrees. mix ingredients together in bowl, pour batter into lightly oiled round pan. bake for 20 minutes.


i had this with some quick and easy potato gulasch. very filling.
